
Ponce City Market has announced NoriFish, a sushi concept offering fresh seafood straight from Tokyo’s Toyosu Fish Market, and Okiboru, a ramen and tsukemen spot recognized with a MICHELIN Bib Gourmand award, will both open in the Central Food Hall spring 2026. The chef-driven concepts are both from Atlanta locals Sean Park, a formally trained sushi chef with 15 years of experience in traditional sushi making and Japanese cuisine, and self-professed “ramen-obsessed” restaurateur Justin Lim.
At NoriFish, high-quality, fresh fish will be flown in from the Toyosu Fish Market in Japan twice a week, and offerings will rotate based on season and availability. The tightly curated menu’s focus will be on bold flavor and precise technique. The menu, created just for Ponce City Market, will feature signature sushi rolls as well as nigiri, premium seafood, warm items and small plates. The beverage program, backed by respected Atlanta mixologist and certified sake advisor Hendry Kurniawan, will offer light and refreshing craft cocktails, approachable house and premium sake, select local and Japanese lagers and crisp wines. Founded by Chef Park in 2022, NoriFish has become an Atlanta sushi staple with locations in Buckhead and Sandy Springs.
Co-founded by Chef Park and Lim and originally opened in 2018 in Los Angeles, Okiboru is a traditional ramen and tsukemen concept that has been honored with a MICHELIN Bib Gourmand award. The Ponce City Market outpost will have a focused menu anchored by tsukemen (dipping noodles) and ramen with collagen-rich broths and house-made noodles, plus appetizers and rice dishes. Guests can expect to drink cocktails, versatile sake options, a selection of lagers and clean craft beers, and non-alcoholic options, including teas and soft drinks. Centered around depth, consistency, and craftsmanship, Okiboru is the result of Lim’s extensive ramen exploration across Japan, paired with Park’s culinary discipline and operational expertise. The concept also has locations in Sandy Springs, Buckhead, Duluth, and Buford, as well as three locations in New York.
Together, NoriFish and Okiboru represent a modern interpretation of Japanese dining –– one that honors tradition while pushing flavor forward. NoriFish and Okiboru are designed to reflect the brands’ core values: integrity, discipline and an uncompromising commitment to quality.
This year, Ponce City Market will welcome several other businesses to the property, including Terminal 26 – a Thai street food restaurant inspired by the country’s iconic floating markets, La Cueva – a cocktail lounge & listening room hidden on the second floor of the Central Food Hall, The Commodore– a barbershop offering traditional barbering services, and Three Taverns Brew Terminal – a new brewery, distillery, and taproom with food from DAS BBQ.
